3 ways to spice up your BBQ!

It feels like summer is never going to come to an end, and we’re not complaining. We know that it won’t be long before the grey skies and drizzle return to our shores. We’re making the most of this sunshine and we hope you’re all coping well.

One of the downsides of the heatwave is cooking and encouraging some family members to eat a healthy and balanced diet. Appetites are often subdued, and no one likes the idea of cooking when the temperatures sore into the high twenties. So what options are there? There’s always the BBQ but having a BBQ every day isn’t always favourable. Here are three ideas that will provide you and your family with a decent meal.

Cold Roast Rib of Hereford Beef
Ask your butcher for a Hereford beef wing of rib, a two-bone rib will serve up to 6 people or 4 people with some leftovers. This cut of beef is ideal to serve as a cold roast. Season the beef with some salt and pepper before brushing with a little oil. Cut the rib in half and place on a roasting tray once the beef has reached room temperature. Brown off the beef before placing in the over to cook for 20 to 30 minutes, depending on how rare you like your beef. After removing, allow the joint to cool before serving with a fresh picnic salad and homemade mustard mayonnaise.

Marinated Steak Wraps
This dish is a perfect recipe for those who don’t want to slave away in front of a hot stove. Ask your butcher for 400g of Hereford beef, cut into strips. Marinate the strips in garlic, oregano, lime juice and olive oil for approximately 20 minutes. Once marinated, stir-fry the steak on a high heat for 5 minutes, before serving in warm tortillas with a cool salad. Find the complete recipe and method here.

Cured Hereford Beef
Serve up to 4 people with our simple cured Hereford beef fillet with bay-infused potatoes. You need 2lb of lean beef fillet or sirloin. Marinate overnight with salt, sugar, pepper, wine, and onions. The next morning, sear the joint before roasting in the oven at Gas Mark 6 for 25 to 30 minutes. Allow to cool before serving on a bed of herbs.
